Production Management
Lead dough mixing, kneading, shaping, proofing & baking processes
Inspect gluten development, elasticity, hydration & fermentation
Supervise lamination (puff pastry, croissants, Danish dough)
Control uniformity in product weight, holes/crumb texture, crust color
